500g uncooked basmati rice
100ml vegetable oil
4 small courgettes
(peeled and cut into small cubes)
4 onions (peeled and chopped)
4 carrots (peeled and cut into small cubes)
2 tomatoes (peeled and sliced)
2 red peppers , pith and seeds removed (sliced)
1 medium cauliflower
(cut into small florets and pre-cook al-dante)
2 tsp Hungarian paprika
2 tsp Hungarian paprika pure
Black pepper and salt to taste
Cooked rice with pinch of salt according to cooking instructions. Drain, set aside and keep warm. In a large pot heat oil add chopped onion and fry until soft. Add chopped carrots reduce heat and cover. Cook for 5min. Stir in courgettes, tomatoes, red peppers and cauliflower, add paprika and paprika pure. Cover and cook for 10min on very slow heat.
When ready remove from the heat and mix rice with vegetable. Season to taste with salt and black pepper.
Serve with fresh salad.
