  • 4 parsnips, peeled, cored and grated

  • 4 big potato, peeled and grated

  • 1 small red pepper finely choped

  • 1 tsp Hungarian paprika

  • 2 tbsp polenta

  • 1 egg

  • 2 tbsp salted butter

  • 8 tbsp olive oil

  • salt and freshly ground black pepper

  • 1 tbsp chopped fresh parsley, to garnish


  • Paprika mayonnaise 

  • 100ml mayonnaise

  • 1 tsp Hungarian paprika pure

Parsnip, Pepper, Potato and Paprika Mini Rosti

  • Place the grated potato and parsnip onto a clean tea towel and squeeze over a bowl to remove the excess liquid.

  • Melt the butter with the oil in a frying pan over a medium heat, mix the grated potato, parsnip, chopped pepper, paprika, polenta and egg together, season with salt and freshly ground black pepper.

  • Fry the mini rösti for 2-3 minutes on each side, carefully turn it over, until crisp and golden-brown.

  • To serve, place the rösti onto a plate and sprinkle over the parsley.
