2tsp vegetable oil
2 eggs (beaten)
½ red pepper (sliced)
1small tomato (peeled and sliced)
½ small onion (peeled and sliced)
¼ tsp Hungarian paprika
¼ tsp Hungarian paprika pure
1 tbsp grated emmental cheese(or cheddar)
Salt to taste
Heat the oil in frying pan, add onion, fry until soft, add tomato and pepper, cover and leave on slow heat for 3 min or until they are soft.
Bring back to the heat and add eggs beaten with paprika pure.
Leave for 2-3 min on pan without stirring, add grated cheese spreaded evenly over frittata and put under preheated grill.
Leave for 2 minutes or until cheese is melted, take out and sprinkle remaining paprika.
Put back under grill until is frittata ready.
Serve with chips and fresh salad.
