  • 2tsp vegetable oil

  • 2 eggs (beaten)

  • ½ red pepper (sliced)

  • 1small tomato (peeled and sliced)

  • ½ small onion (peeled and sliced)

  • ¼ tsp Hungarian paprika

  • ¼ tsp Hungarian paprika pure

  • 1 tbsp grated emmental cheese(or cheddar)

  • Salt to taste

  • Heat the oil in frying pan, add onion, fry until soft, add tomato and pepper, cover and leave on slow heat for 3 min or until they are soft.

  • Bring back to the heat and add eggs beaten with paprika pure.

  • Leave for 2-3 min on pan without stirring, add grated cheese spreaded evenly over frittata and put under preheated grill.

  • Leave for 2 minutes or until cheese is melted, take out and sprinkle remaining paprika.

  • Put back under grill until is frittata ready.

  • Serve with chips and fresh salad.
